Course Outline:

  • Study the scientific theory of sous-vide
  • Understand the biochemical changes that occur during cooking
  • Master sous-vide preparation, cooking, chilling and storing of meat, poultry, fish, shellfish, fruit, vegetables, sauces and desserts
  • Learn the proper way to obtain the Maillard reaction

    Culinary legends and Chefs from restaurants around the world have received training in the art and science of sous-vide from CREA. CREA launched the slow-cooking revolution when it opened its doors in Paris more than two decades ago and has been training many of the world’s most celebrated Chefs ever since. Founded by Culinary Scientist Bruno Goussault in Paris in 1991, CREA is changing the food regime by educating Chefs to redefine the way food is prepared. CREA courses are available online, on-site at your own restaurant and off-site at CREA Paris and cities throughout the world.
